This is Ami’s Gluten-Free Love Story…
First of all… I am not a celiac and neither is my husband, but we both LOVE our celiac daughter. I had just returned to work after my 2nd child was born when we got the call from the doctor explaining why my first child was not growing, was gassy, constipated, and complained that her stomach hurt.
She was malnourished and looked like a starving child from a 3rd world country with bloated belly and no butt. After her endoscopy confirmation of celiac disease, my husband wrote me this letter – just 8 days after she turned 2 years old:
“Top 10 Reasons Today is the First Day of a Wonderful New Life in the Frank Family” (ie… after CD)
#10. We know what to do
#9. We will be a stronger family
#8. We will always eat dinner at the table together
#7. Gluten, Schmootin
#6. Our family vacation place will always have a kitchen (already did – so this was great)
#5. Marvin’s (our cat) diet of cat food, two teaspoons of milk and chicken will remain
#4. Mommy’s butt will get smaller, Daddy’s gut will get smaller, and (daughter’s) butt will get bigger
#3. In the year 2009, we have the resources and the money to do this right
#2. Daddy just resolved to FINALLY learn how to cook.
