I haven’t found a GF bun that’s really good enough to bother with. I got so accustomed to not eating bread during the years that GF wasn’t available that I don’t really want it anymore. A lettuce wrap is fine, or a knife and fork (to quote an old Jimmy Buffett song, “I like mine with lettuce and tomato!”).
If a restaurant says, “We have gluten-free buns!” I might eat one, if I’m hungry enough to want bread to fill me up, but otherwise, I’ll decline. There’s no need for me, or the restaurant, to spend extra money on something that I won’t finish. Although there are a few exceptions, most GF breads are simply not that good.
