I think as we all know, GF sandwich bread leaves a bit to be desired. My biggest complaint is it seems to generally fall apart so I find myself cutting my sandwiches into halves or fourths.
My new sandwich bread is pancakes. Yup pancakes. I made up a batch this morning and put the left overs in the fridge. Tonight I wanted a ham sandwich and saw the pancakes and thought what the heck. They were great. They did not fall apart like many GF breads and stayed intact to the very last bite. They were not too much bread or too little. Unlike stor bought breads mine were not loaded with starch. Try it I think you might be pleasantly surprised.
My recipe was 1/4 amaranth flour, 1/4 millet, 1/4 tapioca starch, 2 eggs, 2 tsp baking powder, buttermilk to consistency, no oil.
