Gluten Free Crepes

    1 cup Abundant Life Foods All-purpose Flour
    1 1/2 cups of milk or water
    2 eggs
    1/4 teaspoon salt
    2 tablespoons butter, melted
    1 teaspoon vanilla

    Directions
    1. In a large mixing bowl, combine all ingredients. beat together until smooth.
    2. Heat a griddle or frying pan over medium high heat. Lightly oil or use gluten free cooking spray. Pour or scoop batter onto the griddle ( approximately 1/4 cup for each crepe). Tilt the pan in a circular motion so that the batter coats the surface evenly in a circle shape.
    3. Cook the crepe until the bottom is light brown. Use a spatula to flip the crape and cook the other side.
    4. Serve hot.
